Maple Butter Pecan Muffins

 


These are simply delightful. They have a slight hint of Maple Syrup, and melt in your mouth! Delicious! 


3 eggs 

1/4 cup yogurt (I used Maple Hill Yogurt Unsweetened) 

1 tsp Vanilla

1 1/2 tbsps Maple Syrup 

1/2 cup melted butter

2 1/4 cups almond flour

3/4 Bocha Sweet 

2 tsps baking powder

1 cup chopped pecans


Mix the eggs, vanilla, Bocha Sweet, maple syrup and yogurt until blended. Melt butter on medium and add, mixing everything together.  Then add flour, baking powder and chopped pecans, stir until everything is mixed evenly together. Preheat oven to 400 and add muffins to medium muffin cups. Put in oven for 20 minutes (or until toothpick comes out clean). Enjoy! (Makes 12 muffins)

Raspberry Muffins

 


These are low carb, healthy muffins. They taste amazing, in fact I didn’t realize a muffin could taste so good! 


2 1/4 cup almond flour

2 tsps baking powder

1 pinch of salt

2 eggs

1 tsp vanilla

3/4 cup Monk Fruit or Bocha Sweet 

1/2 lemon for fresh lemon juice

2 taps or so freshly grated lemon rind

1/2 cup melted butter 

1 cup raspberries 

Directions: 

Beat eggs and sugar together with vanilla. Melt butter and mix for a few seconds. Then add lemon juice and grated lemon rind. Add the flour, then mix slowly. Finally add the baking powder and mix until everything is combined. Preheat oven to 400. Add the raspberries and fold with a spatula carefully. Spoon into muffin baking cups, and put into the oven. Bake for 20 minutes, until tops are golden brown. Enjoy!

Lindor Ice Cream

Have you ever had Lindor Ice Cream? I love making fun/different ice creams. Perfect for a warm spring day.

2 cups heavy cream
2/3 sugar
2 tsp. vanilla
9-10 Lindor Chocolates (depending on how many you want)


Pour the cream into a bowl


Add the sugar and vanilla


Stir well


Chop up the Lindors into small bite sized pieces. 

Then Put in the fridge for 5 minutes. 

Take your ice cream maker out of the freezer and pour everything (try not to pour the Lindors in at this time, rather let it mix for about 10 minutes and then add them)

After 25 minutes, your soft serve ice cream should be ready. 


Scrape the edges and put into an ice cream bucket and put into the fridge for 2 hours and then enjoy!

Carrots and Beans

Carrots and beans - delicious together! Especially with onions and garlic. Here is a yummy dish to try!

What you need:
Several Carrots (depending on how much you want to make) 5-7
Beans 3 cups or so
1 Onion
5-6 Garlic
Garlic Powder
Salt to taste
1 tsp fresh Basil



Chop the veggies to your desired size. Then steam until tender and the beans are bright green.


Chop the onions while veggies steam.


Peel and put garlic in garlic press. Fry the onions and garlic in a glass pan with olive oil.


 Add beans and carrots when done, mixing frequently. Put in a casserole dish. Stick in oven for ten minutes to re-warm up.

Potato and Sausage

First you make sure if you don't have a local made sausage, that the stuff you have is healthy and gluten free as - I have discovered sausage has gluten and sure doesn't make you feel good if you can't eat gluten. We are blessed to have a nearby farm where we can either bring our sheep to or know what's in the meat. :)

What you need:
Potatoes (around 4-5 cut small)
Butter (about 3 tbsp.)
Sausage (about a lb.)
1 Onion 
6 Garlic
Spices to taste
Salt to taste

First cut the potatoes and put them in a pot - until soft. Around 20-25 min. make sure you have a lid!


In a separate pot, cook the sausage after potatoes are cooked.


In the pot with the potatoes cook the onions and garlic until soft. 


Add some garlic powder, sage, thyme and whatever other spice you would like - and enjoy! :)

Buckwheat Breakfast

Here is a tasty breakfast I'm sure you'll enjoy! My sister loves to eat it with me whenever I make it.

1/2 cup or so of Buckwheat
1 cup or so of water

Soak overnight and rinse in a strainer.


Put in a blender and add cinnamon, nutmeg, cloves and vanilla to taste.




Add add a banana


Add cinnamon 


Spread it over the top and use a spoon to stir it around gently.

Huckleberry Pie

Mhm, huckleberry pies are so good! I decided to try a gluten free form of it, and came up with this! It's not too sweet, but it still tastes good to me! :)



In a metal bowl, stir together huckleberries, lemon juice, sugar and tapioca. Add cinnamon for extra flavour, if you want.


Mix together oats and butter in a separate bowl, then place them in a pie dish. With your hands, firmly press down to create the crust. 



Press the oats firmly on the bottom of a pie crust, and put in the oven for 10 min.


Place the huckleberry mixture into a pot, stirring frequently until it bubbles. Cool for 3 minutes and add to the crust. 


Let settle in the fridge for an hour or so, until the topping has hardened. Serve with whipping cream on top, unless you are dairy free - then don't worry about the cream, just enjoy the rich taste of the huckleberries! :) It is good either way. 

Garlic Squash

Since I love garlic and onions, I thought they'd blend well with a squash recipe. Enjoy! :)

You'll need a squash - your favourite.
Some butter - about 2-3 teaspoons.
One onion
Five-6 cloves of garlic. 
Salt
Pepper
Optional Spices to taste - will go into detail below :)



Cut the squash in half, taking out all the seeds. (of course wash it before hand) peel it, and then dice it into small cubes. 


Cut onions, and place in a tall skillet (or something similar to what is shown). Melt butter, onions and garlic for several minutes, until they turn translucent. 


Add a little extra butter, and place the cubed squash into the skillet. 


Add some salt


And pepper - then cook about 20 min on medium. When beginning to soften, turn on low for  about five minutes.


Add spices. I love adding garlic powder to whatever I make - so feel free to add (it really strengthens the taste!). I added sage, thyme and nutmeg, but feel free to add more or less of these. 


Stir well, and check to see if they are soft and almost mushy. (You want to catch it before it's mushy!!) Serve warm and enjoy. :)
